National Tequila Day!

So it's one of my Top 10 National Holidays of the year: National Tequila Day! So I made my favorite margarita recipe: Hungry Girl's Magical Low-Calorie Magarita.

1 1/2 oz tequila
1 oz lime juice
One 2-serving sugar free lemonade powered drink mix packet
6 oz diet lemon-lime soda
Lime garnish

I make it with only 4 oz of Sprite Zero and then blend with about 5 or 6 ice cubes. My husband likes salt around the rim but I don't like them that way.

Hope you enjoy National Tequila Day with either just a straight shot of tequila or this wonderful margarita!

National Hotdog Day (July 23)

For National Hotdog Day, Sonic had All-American Dogs and Chili Coneys for only $1! So the kids, hubs, and I went to a movie and then enjoyed lunch at Sonic! Hotdogs were great and tasted even better since it was National Hotdog Day!

National Sugar Cookie Day

We are currently on vacation in Iowa visiting family, friends, and attending a 10 year class reunion! So my mom of course is spoling my children like Grandmas are suppose to. All of that includes cookies, movies, a new kiddie pool for the backyard, and LOTS of hugs and kisses. Here's my youngest daughter and my nephew enjoying some Monsters University sugar cookies that Grandma picked up for National Sugar Cookie Day!

Eat Your Veggies Day!

Girls enjoyed Eat Your Veggies Day by making their own chicken fajitas. Green, yellow, and red bell peppers with onions and then the chicken was made up with some garlic and herb marinade. Girlies enjoyed it even more since they got to make up their own. They loved Eat Your Veggies Day! Hope you did too!

Since I don't do very well with cake, well actually I do really well with making sure cake finds it's way to my mouth, I made Cinnamon Applesauce Muffins to celebrate National Applesauce Cake Day. The house always smells amazing when I make these muffins and the kids were ready and very eager to help them disappear when they popped out of the oven.

May 9th~ National Butterscotch Brownie Day

So even though the blog has been a little behind, it's just that busy time of year, we have still been celebrating the food holidays. So here is a picture of a "Blondie" the girlies and I shared at Applebee's on National Butterscotch Brownie Day. *sidebar- Blondie is another name for a butterscotch brownie.
The blondie was HUGE in pointsplus vaule but since the girls and I shared it, we still got to enjoy the food holiday without going over board.

National Buttermilk Biscuit Day & National Egg Month

Celebrated a double holiday today! Made semi-homemade (as if you couldn't tell? Lopsided and all) buttermilk biscuits, and topped them off with eggs, turkey bacon and slices of cheese for a wonderful Brinner sandwich. They were delish! Happy National Egg Month and National Buttermilk Biscuit Day!

So my middle daughter, Emily, is just crazy about pie. This year on my Mother's Day card she made at school, it actually said: "Mom, I love you more than flowers and pie". National Licorice Day!

Grilled Cheese Sandwich Day!

So I came across different things to make in your waffle maker on Pinterest and one of the ideas was grilled cheese. So of course I had to try it for Grilled Cheese Sandwich Day! I made the ultimate grilled cheese with sliced american cheese, a Laughing Cow cheese wedge and some deli sliced turkey! So yummy.

Make Your Own Holiday Day!

One of my absoulte favorite meals is rice and sauteed veggies. It so simple but so delish! It's also my go to meal. We always have rice and most of the time it is already made. And of course we always have veggies to be sauteed. But the best thing about this dish is that there are so many possibilites. Add some chicken or fish with it for a great dinner or keep just the rice and veggies for a light lunch. :) So I am declaring this Favorite Dish Day! Happy National Margarita Day!

I love this day!! I tried the best margarita recipe awhile back and it will be the only recipe I ever make again. Low Calorie, easy, and amazing! Hungry Girl is a genius! Its called HG's Magical Low-Calorie Margarita. Here's the recipe:

1 1/2 oz tequila
1 oz lime juice
One 2 serving packet sugar free lemonade powdered drink mix
6 oz diet lemon lime soda

I blend mine and reduce the diet soda to 4 oz for a thicker drink. Try these out, and I promise you won't be disapointed!

Cream Cheese Brownie Day

In honor of Cream Cheese Brownie Day and Valentine's Day, I made Valentine Cream Cheese Brownies. They look like a hot mess, but in my personal opinion, the best brownies are the messiest brownies. I added food coloring to the cream cheese and then sprinkled Andes peppermint pieces and mini chocolate chips on top. Now the actual brownie part is a box of devils food cake mix, canned pumpkin and half a cup of water. It is the best lower fat brownie recipe I have ever tried. Canned pumpkin should get more credit. It's amazing!

National Fettuccine Alfredo Day

So I hardly ever make my own recipes. I love using cookbooks. They are easy to follow, no guessing, and makes grocery lists a snap. But once in a blue moon, I take my cooking skills and throw my own recipe together. I'm no Tom Kalb (and if you don't know who that is, don't worry, you will someday) but sometimes everything goes just right and I make a masterpiece. Today was National Fettuccine Alfredo Day, and even though I have 3 bottles of Alfredo sauce in the pantry, I wanted to make an homemade sauce. So after looking through some recipes and seeing what I had on hand I came up with this:

Fettuccine Alfredo

* 1 tbsp butter
* 6 oz of uncooked fettuccine noodles
* 1 cup skim milk
* 4 oz fat free cream cheese, at room temp and cubed
* 4 tbsp grated Parmesan cheese
* 3 laughing cow cheese wedges, at room temp and cut up to small pieces
* 5 oz cooked shredded chicken
* 1 cup bell peppers

1. Make fettuccine noodles according to directions on package.
2. While noodles cook, mix skim milk, cheeses, and butter in small pot on the stove. When they have started to heat up, whisk together. Keep whisk every so often to break up cheese lumps.
3. Cut up bell peppers into strips.
4. After noodles are done, drain. Do not put them back in the pot yet.
5. In the large pot, mix bell peppers and chicken, and then add your noodles. Then pour on your sauce when it is free of any lumps and nice and creamy.
6. Mix all together to get sauce all mixed around. Then serve and enjoy.

Makes 4 servings.

Homemade Soup Day

recipe from Weight Watchers: What to Eat Now cookbook
Potato Lover's Soup with Crispy Bacon

*3 large (8 oz) baked russet potatoes
*3 strips bacon
*3 garlic cloves, minced
*4 scallions, thinly sliced
*2 3/4 cups reduced sodium chicken broth
*1/4 tsp salt
*1/4 tsp hot pepper sauce
*3/4 cup fat free half and half


1. Leaving skin on, coarsely chop potatoes; set aside.
2. Cook bacon in large nonstick saucepan over medium heat until crisp. Drain on paper towels and set aside. Pour off and discard all but 1 tsp of drippings.
3. Add garlic and half of scallions to drippings saucepan. Cook over medium heat, stirring occasionally, until softened, about 3 minutes. Add broth, salt, pepper sauce and potatoes, mashing potatoes with wooden spoon to break them up slightly. Bring mixture to boil. Reduce heat and simmer until heated through, 2-3 minutes.
4. Stir in half-and-half and return to simmer. Serve soup sprinkled with crumbled bacon and remaining scallions.


Note: I have made potato soup many many times, and every time it is different. But I now have the perfect potato soup recipe that I will be coming back to time and time again. This was wonderful! And you get a huge serving of it! 1 1/2 cups for only 5 PPV! :) The girlies enjoyed it just as much. Two out of three came back for seconds. And if you have small children, getting them to eat one helping of soup is a challenge in itself!

The reason why I love celebrating national food holidays is because things are never boring in my kitchen and I make dishes that I never would of made or even attempted before. So of course today is National Carrot Cake Day and I had never made a carrot cake until now. I used a Weight Watchers recipe and it went over very well with the kids. :)

National Peanut Butter Day!

I am not a huge peanut butter fan. Truthfully I could live without it. My husband however CANNOT live without peanut butter. He has been waiting for this holiday all week. :) And thankfully we didn't celebrate it the way he wanted to with, peanut butter pancakes for breakfast, peanut butter and jelly for lunch and then finishing the day with peanut butter chicken for dinner. I don't think I would of eaten peanut butter for a month if we had done all that. :P But we did celebrate National Peanut Butter day with 1 PointsPlus Peanut Butter Cookies. It's just the right amount of peanut butter for me.
